Oh it's not summer without s'mores. This weekend on August 10th is National S'more Day. Growing up, I was in the Girl Scouts and I know all about making this summer treat. We would do it every year at Girl Scout Camp and I'm a huge fan of s'mores. I made this pie for my birthday.
I used a rectangle, circle and the coffin cookie cutter from this set. The rectangle was used to make the chocolate bars. I used the circle for the marshmallows. Once they were cut out, I squished the sides in and flattened the top to make it look more like a marshmallow. The coffin cutter was for the smaller s'mores. For the ooey gooey goodness and the larger s'mores, I found this free clip art at Grant Ave Design. I printed out the images and hand-cut out both of those cookies. For the marshmallow on a stick, I used the circle cutter again and the letter "h". I cut out the letter h and cut off the part of the letter I didn't need. Then I used the "h" cookie cutter to notch out a part of the marshmallow to attach the two pieces of dough together to finish the cookie. Here are some pictures that show how I made both the marshmallows and the marshmallow on a stick cookies. I followed this color scheme to create the colors for the cookies. I wanted the chocolate brown to be a very saturated shade. To achieve the shade I wanted without using a ton of food coloring, I added some cocoa powder to my icing and it made the icing taste even better. To add the bit of golden brown to the marshmallow on the stick, I piped a small amount of light brown icing on piece of wax paper and let it dry. Once dry, I crushed it up with a rolling pin and used a paint brush to apply some of the coloring to the marshmallow.
I took a look on Pinterest to see how many different s'more recipes where out there. There was everything you could think of: cupcakes, bars, and every s'more doughnuts. I will definitely have to make some time to try a few of them. Have you tried these s'more ice cream sandwiches from Trader Joe's? I tried them for the first time last summer and picked some up for this weekend. They are a fantastic snack on a hot summer evening.
